Caesar Salad Supreme

Here’s a great Caesar recipe, and best yet, the dressing will keep for a couple of weeks in your fridge!

Dressing:

Place the following in your blender, and blend thoroughly:

  • 1 full head of garlic (finely chopped)
  • 1 tbsp worcestershire sauce
  • 4 tbsp dijon mustard
  • 2 tbsp honey
  • 3 lemons (zest and juice)
  • 1-1/2 cups of your best olive oil
  • 1 tspn salt (2 tsp if you don’t use anchovies)
  • option:  2 anchovies
  • option:  a bit of bacon fat

Croutons:

  • cut up your favourite bread (artisan?) in generous sizes
  • soak in water lightly
  • add oil to coat
  • season with salt and pepper
  • option: add your favourite seasonings too
  • place in broiler to crisp

Prepare:

  • romaine lettuce
  • Parmesan cheese
  • option: crisp bacon

Cut your romaine lettuce, add your dressing, croutons and top with freshly grated Parmesan cheese.  Of course, for us Candians, there is always the option to add some bacon too.  Season with some freshly ground pepper and serve.
