Chicken Wings Supreme!

I have a colleague and friend that shares the same passion for cooking (and growing your own ingredients) that I have. Brian has a specialty for chicken wings, so I was fortunate to get his recipe (which also comes from insider information in the restaurant industry).

For the Wings

  • 1 Box Costco wings, use half to serve 3 to 4 people (about 25 wings and drums)
  • 1 Butter milk (or substitute milk + 1 lemon)
  • 1 Costco ranch dressing
  • 1 Costco parchment paper
  • 1 cut up carrot, celery, sweet peppers, into slivers for garnish and eating with bowl of Ranch dressing cold
  • Wash wings in water, salt and pepper wings, pour butter milk over wings to cover. put in fridge for 2-3 hours in large bowl (cover with Tin foil , If no butter milk cover wings with milk, squeeze one lemon in mix).

  • 3 cups of flour – 1/2 cup of corn flour ( if you have)
  • 1/2 cup of Paprika (this makes them crispy)
  • 3 table spoons of oregano
  • 3 tbs of garlic or onion power
  • 1 tbs of basil
  • 3 tbsp of salt or less
  •  1/8 tsp of pepper
  1. Mix coating thoroughly in plastic bag wait for wings to marinate
  2. Drain out butter milk in colander
  3. Prepare large cookie sheet with parchment paper
  4.  Preheat convection oven at 425- 450
  5. Put 4 or 5 wings in bag at time and coat the wings, shake off excess and put on cookie sheet ( make sure the wings are a little separated,  so the heat has a chance to move around the,-  1/2 inch apart. ( use two cookie sheets if you need more space but put the rack up as high as you can,  then put the next one below it , not at bottom of stove ( watch the bottom cookie sheet as they will cook quicker.)
  6. wait 15 min and turn wings over for doneness then take them out and flip all the wings with tongs ( other side get crispy)
  7. cook another 15 minutes or more, to desired crispiness ( depends on stove)
  8. total cooking time 30 – 35 minutes at high heat makes them crispy
  9. Take them out when you feel doneness ( test one)

  • Frank’s Hot Sauce
  • Ranch dressing
  • 1/4 cup of butter
  1.  1 cup of Hot sauce ( Franks is not too hot, or you can use your favourite here)
  2.  Dilute Ranch dressing to desired hotness (ie. hot sauce + dressing)
  3. 1/4 cup of melted butter
  4. Mix all together in large bowl
  5. Place all wings in large bowl and mix gently ( serve immediately as they will begin to loose crispiness)
  6. Coat wings 3-5 minutes after they come out of oven
  7. Put extra ranch and hot sauce on table for preference
  8. Sour cream or Ranch works well to cool off hot sauce wings as well
  9. ENJOY!
